About The Coffee
The coffee is decaffeinated using the Ethyl Acetate (EA) process, also known as "Sugar Cane Decaf," which uses local sugar cane to gently remove the caffeine. This method preserves the natural flavors of the coffee while ensuring a clean cup without the harsh chemicals typically associated with decaffeination. Unlike the Swiss Water Process, which uses water to extract caffeine and can sometimes draw out more of the coffee’s natural flavors, the EA process relies on ethyl acetate, a naturally occurring compound from sugar cane, to bond with the caffeine. This process is known for being gentler and more effective at maintaining the integrity of the coffee’s flavor profile.
The coffee comes from the San Agustín municipality in the Huila region of Colombia, where various smallholder farmers collaborate with Cóndor Specialty Coffee to produce top-tier beans. Cóndor, a pioneer in the Colombian specialty coffee industry, has been working with farmers since 1987 to support quality production through direct relationships, agricultural guidance, and post-harvest assistance. The fully washed Caturra, Colombia, and Castilla varietals grown here thrive at elevations between 1,700 and 1,950 meters, producing a coffee with remarkable depth and character.
